Spinach Feta + Wine = Good night

Found a recipe for Spinach Feta Pizza on allrecipes.  A quick shopping trip and 20 mins of cooking later and…

The only change I made was to use the Pillsbury pizza dough instead of doing it homemade (making from scratch takes too long when I get home at 7pm), and cooked for 15-20 mins instead of 35-40.

Sooo good.  And not too overly unhealthy (or at least that’s what I tell myself)

I know the “official” day hasn’t hit, but the shivering I’ve been doing in my office for the past few workdays is a sure sign.

(Heat is getting fixed today…woo!)

BTW first official day for 2008 Dec. 21st.

Update: Just read that shivering can burn up to 220 cals/hr.  There’s my silver lining.

dessert the healthy way

I’ve been craving all things sweet lately…I’m guessing it has something to do w/ the aisles and aisles of Halloween candy I walk past every time I’m in Target.  Anyway, I did some research and found a recipe to make this baked apple treat:

For the recipe, visit FitSugar.  I tweaked it slightly by adding raisins and used sugar-free caramel instead of honey. As you can see mine didn’t react to baking quite the same way the FitSugar apples did.  Not quite as sugary as candy but it satisfied my sweet tooth (until tomorrow…)

Note: Some apples need more baking time.  I put mine in for 35 mins and they still kept their form.

By the end of my work day I had only eaten fruit and a piece of chicken, so my carb-loving body downed a few handfuls of chips.  Pringles Select…only the best when I cheat  :)   Anyway, my stomach is killing me today so lesson learned.

Post-Boston diet

OK, I tend to say I’m going on a diet all the time, and rarely does it last for more than an afternoon. However, this time it’s after a 4-day weekend pigging out on everything in sight in Boston.  So I’m thinking I should take it seriously this week.

Today I figured out that if I write down everything I’ve eaten, I might be able to feel guilty enough when I read the list that I’ll stop pigging out.  Today’s list is:

  • 3 cups of coffee (can’t be helped when I wake up at 6am)
  • handful of sunflower seeds (would’ve been 2)
  • ham & cheese sandwich
  • 8 pieces of candy corn (OK, I caved a little here)
  • chicken recipe from allrecipes.com (picked b/c it was in the “healthy living” section…blech), w/ fresh broccoli & homemade sweet potato fries as sides (those were damn good…toss w/ olive oil mixed w/ italian dressing mix and bake)

Day 1 accomplished.  If you want to try the recipe, skip the lemon juice (or at least halve it…1 tbsp made it waaaay too tart)

Can’t bring myself to Wii fit my way back into shape yet…not ready to hear it tell me I’m a pig
