Found a recipe for Spinach Feta Pizza on allrecipes.  A quick shopping trip and 20 mins of cooking later and…

The only change I made was to use the Pillsbury pizza dough instead of doing it homemade (making from scratch takes too long when I get home at 7pm), and cooked for 15-20 mins instead of 35-40.

Sooo good.  And not too overly unhealthy (or at least that’s what I tell myself)

Failed to resist Black Friday

During my first year out of college and in the “real world” with my “real” first job, I saw Black Friday as my big opportunity to get everything I wanted at affordable prices.  My first laptop was bought/earned after standing outside of Bestbuy braving the cold weather and line around the building at 4am, running with the herd at full stampede pace to grab every deal in sight, followed by waiting in a checkout line that weaved across the store and then in and out of several aisles.  It was pure madness but my adrenaline was high and I had a credit card.

That first year was my worst.  Since then I have managed to wait until at least 8am before foraging for deals, and year by year my urge to run out and buy everything I see has dwindled (thank goodness).  Last year I was thisclose to buying an elliptical machine for $400, until my common sense finally kicked in.  It was around this time that I realized that if I don’t go out, I wouldn’t get the urge to spend.  Right?  Right?!?

Thus began my plan for Black Friday 2008.

Step 1: Do NOT take off of work.  If I’m at work, I’m not out shopping.
Step 2: Avoid taking more than a few minutes to look at the ads, for fear of finding that “amazing” deal I can’t pass up.
Step 3: Repeat to self: If I didn’t want it yesterday, I don’t want it now.

Sounds easy enough, right?  Wrong…

Step 1 was easy.  If I tell my boss I’m coming in, I’m coming in.  It’s as simple as that.

Step 2 was relatively easy.  I opened my paper yesterday morning and managed to skim through all of the ads over my bowl of cereal.  My fiance fell off the track around this step…I caught him pen-in-hand jotting down anything that looked interesting.  I think his list included a sound system and several TV deals, and possibly subwoofers?  I’m not quite sure as I refused to pay too much attention.

Amazon was my downfall.  Last year I participated in the “Customers Vote” drawing…6 rounds of “voting” for your favorite fantastic deal, followed by a drawing to decide which customers get the opportunity to buy the item at the super-low price.  Last year I wasn’t one of the lucky chosen few, but the year before I got a drill for around $30 and a Swiss army knife for $3.  Anyway, the greater the deal, the less odds of getting it, so this is typically my way of choosing things to buy without actually having to buy them (or even being able to).

That is, until this morning, when I was picked to participate in round 1: the PS3 and Blu-ray round.   Down from $567, I could get a PS3 with an 80GB hard drive, a remote, a controller, a game, and a Blu-ray movie.  My price?  $199.

Did I follow my mantra for the day???

Hell no!  I am now the proud owner of a PS3.  Now what to do with it.  Here’s hoping that common sense will kick in and I resell…

dessert the healthy way

I’ve been craving all things sweet lately…I’m guessing it has something to do w/ the aisles and aisles of Halloween candy I walk past every time I’m in Target.  Anyway, I did some research and found a recipe to make this baked apple treat:

For the recipe, visit FitSugar.  I tweaked it slightly by adding raisins and used sugar-free caramel instead of honey. As you can see mine didn’t react to baking quite the same way the FitSugar apples did.  Not quite as sugary as candy but it satisfied my sweet tooth (until tomorrow…)

Note: Some apples need more baking time.  I put mine in for 35 mins and they still kept their form.

Mmm…macchiato

Made my attempt at a macchiato this morning:

caramel macchiato

Ingredients:

  • 1 tsp sugar-free caramel
  • 1/3 cup milk
  • 1 cup coffee (dark roast best!)
  • 3 drops vanilla extract
  • 1 tsp sugar

While the coffee is brewing, microwave the milk in a mug for 1 min.  Froth the milk (I bought a frother from Ikea for $1.99 and it’s great!)  Fill the rest of the mug w/ coffee, add the rest of the ingredients and stir.  Add whipped cream for an extra bit of sugar  :)

delicious weekend

Spent the weekend eating fresh strawberries from Butler’s Orchard.  Fun and tasty…started with snacking, then got more creative with smoothies, shortcake, ice cream and yogurt  :)

legos taking over the world

First they took over the Bible, then a life-sized version washes up on a beach, and now legos are being used to fill in missing bricks in ancient buildings in Bocchignano, just outside of Rome.

Side note: what would be cheaper/sturdier?  Walls made of legos, or walls made of plaster?  My future home just got a makeover  :)

I’m engaged!

OK, this post is a few weeks late  :)   I was debating whether or not to post anything too personal on here, but it’s a huge deal and I’m really happy about it so I don’t care who knows.

One thing I realized this weekend is that I’m going to have to give up the snooze button on my alarm clock starting in August.  Sooo…I’m going to start reading up on tips for better sleeping so I can work on falling asleep at a normal time and waking up the first time the alarm goes off.  Take notes guys…relationships are tough!

The Lady’s Brunch Burger

It’s so nice to know that the Food Network has our health in mind when they post recipes. This one contains: ground beef, butter, eggs, bacon, english muffins, glazed donuts, and a seasoning made from 4 parts salt, 1 part black pepper, 1 part garlic powder.

Anyone wanna take the brunch burger challenge? If you don’t have a heart attack immediately after, you get a prize ;-)
